Spice Bars

1 tsp cinnamon 1/2 cup ground almonds
1 tsp all spice 1 tsp grated lemon richd
`/4 tsp ground cloves  2 eggs
1/2 tsp salt 3/4 cup Sugar
2 1/4 unsifted flour 3/4 cup Honey
1/2 tsp baking powder 1/2 cup milk

Almond Glaze

2 cup posdered sugar 1 tsp rum (extract)
1/2 tsp almond extract 1-2 tablespoons water

 

1.Sift together spices, salt flour,and baking powder.  Stir in the almonds and lemon rind.

2.In a separate bowl beat the eggs and sugar until a ribbon is formed when the beater is removed.  Sir in the honey and milk.  Gradually stir in the flour mixture, beat until smooth.

3.Spread the batter in a 11 x 17 inch jelly roll pan that is well greased and floured.  Bake at 400 degrees for 12-15 min.  Remove from pan and place on rack.

4.to make slmond glace, mis the powdered sugar, almond extract, rum (extract)and 1-2 tablespoons of water, if necessary.  Beat until the glaze is smooth and of the right consistency.  Add more water, if necessary, to thin.  Spread the warm cake with almond glaze.  Cut into 1 x 2 1/2 inch bars while still warm.  Keep in airtight tins.  Makes 4 dozen bars.
