Prep, Bake, and Problem-Solve: Inside the Remodeled Culinary Arts Lab at Crescent Valley High School

As Career and Technical Education (CTE) Month continues, we are proud to highlight a program where professional organization, culinary chemistry, and teamwork intersect. In the Baking 1 & 2 classes at Crescent Valley High School, students are doing much more than following recipes; they are learning the systems and standards that define a professional kitchen.

The Power of Preparation

A recent highlight in the program featured the “One Big Giant Chocolate Chip Cookie” assignment. Before a single bowl was touched, teacher Emily Sass introduced the class to the essential culinary concept of “mise en place.” This French term, meaning “everything in its place,” teaches students to measure and arrange all ingredients on trays before beginning the assembly process. By requiring approval of their mise en place trays, Ms. Sass ensures that students understand the importance of accuracy and organization, skills that prevent mistakes before they happen.

Learning Through Troubleshooting

Even with perfect preparation, baking often requires real-time adjustments. During the cookie assignment, some student groups noticed their dough was too loose, while others realized they needed to adjust their oven times based on the size of their creation. These moments became vital opportunities for group problem-solving. By collaborating with their peers and seeking professional feedback from their instructor, students learned that “mistakes” are simply a necessary part of the culinary learning process.

Building Professional Confidence

To ensure every student feels empowered, the semester begins with familiar recipes. This approach allows students to master the basics of safety, sanitation, equipment handling, and the functions of specific ingredients before moving on to complex techniques they may not have encountered before.

As they progress, students rotate through professional kitchen roles, including:

  • Head Chef and Sous Chef
  • Equipment Manager
  • Sanitation Manager
  • Bus Person

A Modern Space for Future Careers

The learning experience is further enhanced by the district’s investment in student success. In the summer of 2024, the culinary space at Crescent Valley High School underwent a major remodel. Funded by High School Success funds, the kitchen now features commercial-grade appliances. This ensures that when students eventually enter the workforce, they are already comfortable using the same high-caliber equipment found in professional restaurants and bakeries.
